Sour cream and cream cheese in a casserole???

february-26-2009-casserole-001I am always looking for new and easy/simple meals to make for the family.  I looked in the freezer last night and saw that we had quite a bit of ground turkey… so I googled ground turkey recipe and came up with something that I tweaked a bit.  I am always tweaking recipes to fit the children’s taste.  The recipe was titled “ground turkey casserole.”  Well, a simple title should have a simple list of ingredients, right? Right! 

So, this dish called for ground turkey, tomato sauce (but I used a can of diced tomatoes), 1 t of sugar (which I omitted and added salt and pepper to taste), 8 oz container of sour cream, 8 oz package of cream cheese, 12 oz package uncooked egg noodles, and shredded cheddar cheese.

Simple ingredients = simple directions = my favorite part!

1. preheat oven to 350.

2. in a large skillet brown the ground turkey, drain the fat, stir in can of tomatoes and add salt and pepper to taste.  set aside.

3. in a bowl, combine sour cream and cream cheese. mix well and set aside.

4. cook noodles according to package directions. 

5.  in a casserole pan, layer the noodles first, followed by meat, then sour cream/cream cheese mix, lastly top with cheddar cheese.

6. bake at 350 for 35 minutes or until cheese is melted and golden.

Morgan had two helpings!  Matthew had 1 1/2 and Ethan only ate the noodles.  He had a rough day today — so did I!

I thought it was tasty and Vince said it was repeatable… good enough, try it!

The next day — the children ate up the rest for lunch!  YEA!!!!
